My Paella Story 

​​I hail from Barcelona, where the Mediterranean Sea meets the northeast of Spain. Coming from a country celebrated for its diverse, healthy, and delectable cuisine.

​

Growing up, my mother, who tirelessly cooked for our family of six, instilled a love for chef-quality meals. Dinner at 9 PM was the norm, and I often played the role of my mother’s sous chef, especially when it came to paella. To some extent, I believe all chefs draw inspiration from their mothers' cooking.

 

Her Paella was the best, seriously, dangerously delicious. My family immigrated to Canada in the mid 70's. My father & Uncle opened the first Spanish restaurant in Manitoba it was 1978; they called it "Los Españoles". Most of us eventually returned to Barcelona, where I remained for twenty-six years until coming back to Canada in 2015.

Why Paella La Flamenca?

It’s a tribute to my mother’s beautiful paella and the painting she created in 1977, proudly displayed in our family’s Spanish restaurant and later at home. Additionally, as a former Flamenco Dancer, I’m deeply passionate about the folklore of this region.
My journey started when I landed in Winnipeg, Manitoba, in 2015, accompanying my ailing mother. Beginning as a chef cooking in people’s homes, I eventually hosted Paella Sundays at one of the city’s most renowned restaurants-The Tallest Poppy. Vancouver became my final stop, where I continued my culinary venture from 2016 to 2020.

We all know what transpired after that…

My Uncle Jose continued to operate and own many more restaurants throughout the years.  I followed him and my three years working at his restaurant "Marisqueria Miro" in San Juan, Puerto Rico, were  amazing!  MIRO was an Award Winning  restaurant in San Juan and loved by many who visited t
